Our wines

Bout d'Z*n 2018

“ Bout d’Zan” : A nickname given to my father when he was a young boy to describe his short stature and his dark complexion. Today, we use it to evoke the notes of black licorice in this wine.
Varieties : 75% Grenache, 25% Syrah
Terroir : A mosaic of different terroirs: clay-limestone, river rocks, sand. Mediterranean climate of hot, dry summers, little rainfall, and a lot of wind.
Viticulture : Certified Organic and Biodynamic agriculture. Yield: 45 hl/ha. Methods: gobelet pruning for the Grenache, with pruning of shoots ahead of time to limit yields, trellising for the Syrah with removal of extra leaves. Harvest is entirely by hand with very careful sorting, cluster by cluster, of undesired grapes.
Vinification : Respectful of Biodynamic and limited-intervention principles. Blending of grape varieties in tank. 100% de-stemmed. Light crushing. Temperature-regulated fermentation. 15 days of maceration. One pump-over per day, punch-downs only if necessary. Running-off by gravity. Pneumatically pressed. 9 months aging in large oak barrels for 30% of the wine..
Tasting : No worries! This is a red wine that can be set aside and aged for many years, but you can also (very easily) drink it now. It’s good-humored and enjoys good company; it will be joyful as an aperitif at a picnic, will be happy with a last-minute meal with friends, yet will not lose its personality or presence if invited to dine with the mother-in-law.
Pairings : Moroccan meat stew with grilled lamb and vegetables and traditional Mediterranean flavors

Calade 2018

“La Calade” : Nom provençal désignant un chemin qui grimpe avec une notion de cailloux/pavés. Si vous venez chez nous vous comprendrez en voyant notre chemin d’accès…
Cépages : 90% Mourvèdre, 10% Grenache
Terroir : Galets roulés. Climat méditerranéen, étés secs et chauds, faible pluviosité, très venté.
Culture : Culture bio dynamique certification Demeter. Rendement : 30/35 Hl/Ha. Taille en gobelet. Récolte : Entièrement manuelle avec un tri sévère à la parcelle.
Vinification : Respectueuse, éraflage 100%. Léger foulage. Régulation des températures de fermentations. Macération de 21 jours. Pigeage (parfois). Ecoulage par gravité. Pressurage pneumatique. Elevage 30% en demi-muid Stockinger  & 70% élevé en cuve.
Dégustation : Conseillé l’hiver
Accords : Tout ce qui peut provenir de la forêt, et il n’y a pas que des animaux en forêt… Pensez aux cèpes, truffes et chocolat (la mousse au chocolat noir truffée, hmmm…)
Température de service : 16°C
Garde : + 10 ans.
Mise en bouteilles : Au domaine, 300 caisses.
Commercialisation : Automne 2019

Cave Vinum 2019

“Cave Vinum” : “Beware of the wine”: we were inspired by the “cave canem” sign found in the ruins of Pompeii because, today, wine has become dangerous…
Varieties : 40% Viognier,  40 % Roussanne,   20 % Clairette
Terroir : Clay-limestone, north and exposures, Mediterranean climate of hot, dry summers, little rain, and a lot of wind.
Viticulture : Certified Organic and Biodynamic agriculture. Yields are 35 hl/ha. Pruning is in gobelet, then trellised. Harvest is carried out entirely by hand with a very careful sorting of grapes in the vineyards.
Vinification : Pneumatically pressed. Cold-settling at 12-14°C (54-57°F) for 12 hours. Racking with fine lees reincorporated. Fermentation at 18-20°C (64-68°F). For the Clairette, vinification and aging in Stockinger demi muids (600 liter capacity). Blending in March.
Tasting : White wine with very fresh taste….
Parings : I would suggest having this wine with chevre cheese from the south of France, or classic Mediterranean fish dishes. This is a white wine that can hold its own against a bit of garlic (though don’t get carried away)

Khayyâm 2018

“Khayyâm ” : This cuvee is named in homage to Omar Khayyâm. A Muslim Persian poet and mathematician from the 11th century, he wrote hundreds of quatrains celebrating wine and women. He celebrated a philosophy of carpe diem.
Varieties : 75% Grenache, 15% Mourvèdre et 10% Syrah.
Terroir : Round river rocks on red clay. Mediterranean climate with hot, dry summers, limited rain, and high winds,
Viticulture : Certified Organic and Biodynamic agriculture. Yields: 40 hl/ha. Methods: gobelet pruning for Grenache and Mourvedre and trellising for the Syrah with removal of future shoots to limit yields. Harvest is entirely by hand with very careful sorting in the vineyards.
Vinification : Respectful of biodynamic and limited-intervention wine-making principles. Varieties assembled in tank. 100% de-stemmed. Light crushing. Temperature-regulated fermentation. 15 days of maceration. One pump-over per day, punch-downs only if necessary. Running-off by gravity. Pneumatic pressing. 9 months aging in large oak foudres for 30% of the wine.
Tasting : Of our wines, this one is the most oriental, the spiciest, the warmest. It is thus strongly suggested that you invite this cuvée to your table during the cold winter; it will take care of warming everyone back up. Take your time; you can leave it to meditate in your cellar for a few years. For the more impatient, make sure not to push the wine too much: Kayyâm is a poet, he will need a bit of time to open up (the use of a carafe 1-2 hours before the meal is an excellent way to do this). Let time pour slowly like wine; life is sweet.
Pairings : Stewed meats, spiced vegetables, mashed potatoes with black truffle.

Buve Z'en 2019

Varieties : 33.3% Grenache, 33.3% Syrah, 33.3% Counoise
Terroir : A mosaic of different terroirs: clay-limestone soil, river rocks, sandy soil. Mediterranean climate of hot, dry summers, little rainfall, and a lot of wind.
Viticulture : Certified Organic and Biodynamic agriculture. Yield: 45 hl/ha. Methods: gobelet pruning for the Grenache, with pruning of shoots ahead of time to limit yields, trellising for the Syrah. Harvest is entirely by hand with very careful sorting, cluster by cluster, of undesired grapes.
Vinification : Respectful of Biodynamic and limited-intervention principles. Grapes are pneumatically pressed upon arrival to cuverie. Fermentation is regulated during fermentation to 16-18°C (61-64°F).
Tasting : Airy, light, with lovely acidic tension. Drink all summer long without worry- rosé is good with everything and doesn’t make you gain weight!
Pairings : Aperitif snacks, tomatoes, salads, pizza, barbecue…
Serving temperature : 12°C (54°F)
Aging potential : 1 year
Bottling : At the estate, 6,600 bottles.

Vin de Pétanque 2019

 “Vin de Pétanque” (“Pétanque Wine”) : Sip while playing a lazy summer game of pétanque in the south of France, among other occasions!!!! It can also be served chilled for a lovely summer evening party! An easy-drinking wine, without pretense or snobbery: made for sharing with friends, bottle after bottle…
Varieties : Mostly Grenache (75%), with the remaining 25% a blend of Syrah, Mourvedre, Counoise, and Vaccarèse. Only from young vines under 25 years old.
Terroir : Clay-limestone soil with a mix of flat limestone rocks and round river stones on the surface and first layers of soil. Mediterranean climate with hot, dry summers, limited rainfall and a lot of wind.
Viticulture : Certified Organic and Biodynamic agriculture. Yield: 40 hl/ ha. Harvest is entirely by hand with a very careful selection in the vineyards.
Vinification : Traditional winemaking techniques, assemblage of varieties in tank. 100% de-stemmed. Light crushing. Temperature-regulated fermentations. Short time macerating in tank (about 5 days). Running-off by gravity. Pneumatically pressed. Malolactic fermentation in tank.
Tasting : To drink any time, any way, without hang-ups but always with joy! A fresh red wine to drink slightly chilled.
Pairing : For summer parties

Aging potential : 1 year
